A Cozy Classic: Roasted Pepper Tomato Soup

There’s something extra comforting about a warm bowl of homemade soup. This recipe is a favorite among our community, packed with bold roasted flavor and wholesome ingredients.

Ingredients

4 large peppers

4 large tomatoes

1 large Spanish onion

6 cloves garlic

1 tablespoon thyme

Olive oil

Salt and pepper Optional for blending:

Vegetable or chicken broth

Milk or plant-based milk

1 package silken tofu (for a creamy texture + protein boost)


Instructions


  1. Prep the Vegetables: Cut the four sides and bottom off the peppers, discarding the seeds and stems. Slice the tomatoes in half and remove the stem ends. Peel the Spanish onion and cut it into eight pieces.

  2. Arrange for Roasting: Place the peppers skin-side down on a baking sheet. On a separate sheet, arrange the tomatoes cut-side up. Drizzle both with olive oil and sprinkle with salt, pepper, and thyme. Tuck the whole peeled garlic cloves inside the pepper slices and pour a little extra olive oil over the garlic to help it roast evenly.

  3. Roast the Vegetables: Roast the peppers and onions at 400°F for about 20 minutes. Roast the tomatoes for about 30 minutes, or until their edges begin to brown and caramelize.

  4. Blend Until Smooth: Transfer the roasted vegetables to a blender or use an immersion blender directly in the pot. Blend until smooth, adding your choice of broth, milk (or a milk alternative), or a combination to adjust the consistency. For an extra creamy, protein-rich version, blend in a package of silken tofu.

  5. Taste and Adjust: Season to taste with additional salt, pepper, or thyme. If the soup is too thick, stir in a bit more liquid until it reaches your preferred texture.
